Katerina Lazareva is a fermentation chef, innovator, and educator based in Byron Bay, and the founder of Byron Fermentary and All Things Cultured. Her work focuses on zero-waste, closed-loop fermentation systems, transforming whole ingredients into nutrient-dense, flavour-rich foods through both traditional and modern techniques.
