Thomas Pirker

Thomas Pirker’s career as a chef has taken him across the world, but his inspiration remains the same – it’s all about community connections and the simple pleasures of local, seasonal food. 

Classically trained in Europe, Thomas relocated to Australia following a successful international career. After more than a decade exploring the culinary landscape on the mainland, collecting numerous awards and accolades, he made another big jump to Tasmania’s north, joining Grain of the Silos in 2019.

Thomas believes deeply in working with nature and the seasons and, as Executive Chef, strives to share his values with both his customers and his team, bringing them along on a journey of awareness, creativity, and flavour. Together with Food Director, Massimo Mele, he works intimately with farmers and artisans to source local, seasonal ingredients with reverence and respect for the whole food journey.

With his love for exploring creative approaches to cooking, Thomas emphasises the natural flavours of our Tasmanian produce ensuring that every meal served is a sustainable, yet delectable experience for his guests.
